A Vegetarian Ramen Adventure in Tokyo

This month, we had the pleasure of welcoming a wonderful group of 11 friends to our ramen-making class in Tokyo. It was such a lively and joyful day, filled with laughter, teamwork, and of course—delicious ramen!

What made this class extra special was that the entire group followed a vegetarian diet. Normally, we prepare our chashu (braised pork topping) with pork, but this time we crafted a unique vegetarian version using alternative ingredients. The broth, too, was made completely plant-based—no animal products at all.

 

I have to admit, I’m not a vegetarian myself, but I absolutely loved this version of ramen. The vegetarian “chashu” was flavorful and satisfying, and the broth had a depth that surprised everyone. The bonus? It was not only delicious but also healthy.

The energy in the room was incredible. Even the children made ramen from scratch—kneading the dough, shaping the noodles, and bringing everything together in their bowls. Watching everyone’s creativity and excitement was the highlight of the day.

By the end of the class, the table was full of steaming bowls of vegetarian ramen, and the smiles said it all.
